At the Vier Jahreszeiten in Munich one of the cornerstones of this organisation was laid in the 1960s, when I stayed there with my father. I only knew the historic hotels of the Cote d’Azur and of my home town Vienna at that time, this was my first “city hotel”.
The chef’s name was Walterspiel, my father bought his cookbook and he autographed it for us. I still keep it, together with the letterheads and the luggage sticker of the hotel. I think, this is probably the first part of today’s famous hotels archives in Vienna. I will never forget the Shrimps Cocktail; it was made with slices of pears.
