A regulation we discovered during our research for the Hotel Vier Jahreszeiten in Hamburg, published in a Hamburg newspaper of 1898, said: "Staff at hotels should not be served salmon every day, at least one day per week they should have something else to eat!" Salmon was at the time available in abundance and the cheapest fish.
